Mea Culpa
A top-fermented beer, unpasteurized, unfiltered, refermented, and aged in casks. Appearance: Deep amber in color with ruby ??highlights, the head is white and dense. Nose: The aroma is dominated by pink fruit preserved in alcohol (black cherries, plums, currants, raisins), with hints of ripe banana and a light spice (cinnamon and cloves) in the background. Body and Flavor: On the palate, it is soft and enveloping, with a flavorful succession of red fruit preserved in alcohol, almond, licorice, toffee, and spices. The alcohol is present and noticeable; Mea Culpa is a beer designed to be sipped slowly so that new aromas unfold as the temperature rises. The bitterness balances the residual sugar, remaining at very low levels; the body is medium and the carbonation is medium.
